Each sturgeon species gives rise to unique pearls, distinguished by structure, color, size, and aromatic nuances.
This collection is conceived as a journey, not merely a tasting, but an encounter with a rare material shaped by time.
Vivari caviar is best enjoyed in its pure form, slowly, allowing each pearl to open and reveal its identity.
To accompany the tasting, a progressive order is recommended:
Asetra, Russian, Siberian, Beluga, Sevruga, Albino.
Imperiale and Club are selections to be reserved for a dedicated moment, to be experienced separately, paired with a carefully chosen glass.

A sensory journey through the rarest expressions of caviar
Vivari must be experienced through precise gestures, capable of respecting its natural elegance.
Use the appropriate tin opener. Cut the warranty seal on both sides. Then, pry it open until completely open. The caviar must appear intact, shiny, and compact.
A pure tasting is recommended, avoiding accompaniments that distract from its true essence. Use mother-of-pearl, bone, or neutral material spoons. Metal can alter the taste of the pearls. The ideal experience is a vertical, cold tasting, preferably on a bed of ice.
Recommended tasting order:
A white wine or a classic method sparkling wine. Red wine should be avoided.
Store between 0 and 4 °C. Once opened, consume within 24–48 hours, keeping the tin tightly closed and refrigerated.
